The KRYSTAL electric modular type deck oven is designed to bake a wide range of products, including breads, pastries, and Danish goods. It offers flexibility in configuration, with options for trays and steam generators to suit the user’s specific requirements.

Operating Principle

  • Loading and Baking: Products are placed in corrugated baking trays or pastry pans, then loaded into the convection oven.
  • Even Heat Distribution: Hot air circulates evenly throughout the baking chamber, facilitated by ventilator(s) positioned at the rear.
  • Steam Generation: High-quality steam, generated by the double steam generator, ensures optimal baking conditions for various products, including highly hydrated ones like choux pastries and éclairs.
