Operating Principle
Loading and Baking: Products are placed in corrugated baking trays or pastry pans, then loaded into the convection oven.
Even Heat Distribution: Hot air circulates evenly throughout the baking chamber, facilitated by ventilator(s) positioned at the rear.
Steam Generation: High-quality steam, generated by the double steam generator, ensures optimal baking conditions for various products, including highly hydrated ones like choux pastries and éclairs.
