The ORION EVO oven is an electric deck oven engineered to bake a diverse range of bakery products, pastries, and Danish pastries. Renowned for its high performance, it ensures consistent quality and is suitable for sustainable, continuous production.

Operating Principle

  • INTUITIV’2 Touch Screen Control Panel: Equipped with an advanced control panel, the ORION EVO optimizes energy usage by allocating oven power to heating elements as needed.
  • High Baking Capacity: Recognized for its high baking capacity, the ORION EVO can bake up to 15 kg of cold dough per m² of deck hourly. An optional “boost baking capacity” feature is available for operations requiring short baking times or increased dough loads.
  • Optimized Steam Generation: The steam generator is designed to provide high-quality steam continuously, ensuring optimal baking conditions. Each oven deck is equipped with a water meter to regulate steam release accurately.
  • Patented Design: The ORION EVO features patented loading doors with a smooth, continuous surface between the glass and the deck, facilitating quick and easy cleaning. Windows can be easily removed for cleaning purposes.

CONSTRUCTION : 

  • Front: Constructed with polished stainless steel, patented airtight door openings, IDL door handles with 3 positions, removable glass doors, and a hood with a steam extractor fan.
  • Baking Chamber: Top and bottom decks are made of 20 mm thick refractory material. The ROC deck (available with ORION EVO 1 x 800 mm) features 20 mm thick refractory material with 13 mm thick refractory hearth stones on the sides. Integrated heating elements offer high performance, with a 3-year warranty.
  • Steam Generator: Each deck features an independent steam generator with a water meter, pressure reducer, and anti-scale filter. Steam is diffused via the back of the baking chamber, with an “anti-splash” water diffusion system onto the bread.
  • Insulation: Utilizes crossed rock wool panels and reflecting glass doors to minimize heat losses.
