Operating Principle
Loading and Baking: Products are placed in corrugated baking trays or pastry pans, then loaded into the convection oven.
Even Heat Distribution: Hot air circulates evenly throughout the baking chamber, ensuring consistent baking results.
Steam Generation: High-quality steam, produced by the double steam generator, enables the baking of various products, including highly hydrated ones like choux pastries and éclairs.
